Cajun Catfish

Ingredients:

2 tablespoons butter
2 tablespoons olive oil
4 catfish filets
1 onion
1 tablespoon garlic powder
1 tablespoon plus ½ teaspoon black pepper
1 tablespoon paprika
1 ½ teaspoon cayenne pepper
1 teaspoon salt

Instructions:

Combine all ingredients except for the catfish in a cast iron skillet over high heat, until hot but not smoking. Simmer until onion is limp and translucent.

Pat fish dry.

Place fish in hot skillet and cook until it is opaque on the bottom, approximately 5 minutes. Turn catfish carefully, and cook until the fish flakes easily, about another 3-5 minutes. Serve with Kaufmann friendly tartar sauce.
