Low Carb Zucchini Tomato Bites

Ingredients:

2 large zucchinis
1 large ripe tomato, thinly sliced
2 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp Italian seasoning
1 cup shredded or grated parmesan cheese

Instructions:

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Slice zucchinis into 1/4-inch thick pieces. Brush with olive oil on both sides and place on the baking sheet.

3. Sprinkle with salt, pepper, garlic powder, and Italian seasoning on both sides.

4. Top each zucchini slice with a thin tomato slice.

5. Sprinkle shredded parmesan cheese over the tomato slices.

6. Bake for 7-8 minutes then added parmesan cheese on top. Bake additional 6-7 minutes or until cheese is golden brown but not dark brown.

7. Let it cool for a couple of minutes before serving.

8. Garnish with fresh herbs if desired.
