Cauliflower Crusted Pizza

Ingredients:

2 cups grated cauliflower (You can do this with a box grater or in a food processor.) or you can buy frozen riced cauliflower.
1/4 cup egg whites
1 cup fresh mozzarella cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
turkey pepperoni slices

Directions:

Pre-heat oven to 450.

Cook grated cauliflower in a dry skillet over medium heat, stirring constantly, until softened, about 5 minutes. Pour cauliflower into a large bowl and allow to cool.

Or instead of grating cauliflower, you can steam it till it is able to be riced with a fork.

In a food processor or blender, mix remaining ingredients. Remove mixture from container and add to cauliflower and stir to combine thoroughly. Mixture should be thick.

With an ice cream scoop or 1/4 cup measuring cup, scoop mini “pizza crusts” onto a parchment lined baking sheet. Press on mounds to flatten slightly. Top with pepperoni slices. Bake for 25 to 30 minutes. Serve hot or at room temperature.

Can service with salsa or Marinara sauce for dipping.
