California-style Salad

½ cup cucumber, diced
8 plum tomatoes, or 4 medium tomatoes, diced
½ cup chopped red, white, or sweet onion
1 small red, orange, or yellow bell pepper, diced
1 cup peeled jicama, finely diced
3 to 4 teaspoons chopped fresh Italian parsley
1 to 2 tbsp extra virgin olive oil
1 to 2 tbsp strained fresh lemon juice
Salt and fresh ground pepper to taste

Instructions:

Toss cucumber, tomato, onion, peppers, jicama, and parsley in a bowl. Add oil, lemon juice, and salt and pepper. Serve your California-style Salad chilled or at room temperature.
