Grilled Artichokes
Ingredients
4 medium artichokes, trimmed
1/2 cup olive oil
2 cloves garlic, pressed or chopped finely
1 tablespoon apple cider vinegar
1/2 teaspoon salt
Directions
In a small bowl, whisk together vinegar, salt, garlic, and olive oil until emulsified. Place artichokes in a steamer and cook for 30-40 minutes or until just fork tender. Remove the artichokes from the steamer and slice in half, lengthwise. Remove the fuzzy chokes from the inside and discard. Place the artichokes in a zippered, plastic bag, add the marinade, and turn to coat the artichokes. Let marinade for 1-3 hours. Grill or roast to heat through. Serve with lemon aioli, recipe here.
