Mediterranean Baked Fish

Ingredients:

1 pound cod fillets
2 medium zucchinis, sliced
4 medium tomatoes, diced
¼ cup olive oil
1 tablespoon lemon juice
½ teaspoon garlic
¼ teaspoon oregano
1 lemon, cut into 4 wedges

Instructions:

Preheat oven to 400 degrees. Mix zucchini and tomatoes in baking dish; top with cod filets. Spoon olive oil evenly over fish. Sprinkle fish with lemon juice, garlic, and oregano. Bake for 15 minutes. Flip fillets. Bake an additional 10-12 minutes or until fish flakes evenly with fork. Serve with lemon wedges. Enjoy Mediterranean Baked Fish with your family and guests!
