Egg Muffins with Spinach, Bacon, and Goat Cheese

Ingredients:

  • 12 eggs

  • 1/4 cup almond milk

  • 1/2 teaspoon salt

  • 1/4 tsp pepper

  • 2 cups spinach (chopped)

  • 4 bacon slices (cooked, drained and chopped)

  • 1/2 cup goat cheese

 Instructions:

Preheat oven to 350 degrees. Use a regular 12-cup muffin pan. Spray the muffin pan with non-stick cooking spray.

In a large bowl, beat eggs until smooth. Add milk, salt, pepper and crumble goat cheese into mixture. Stir in spinach and cooked bacon into the egg mixture. Fill each muffin cups with egg mixture about 3/4 full.

Bake for 25 minutes. Remove from the oven, let the muffins cool for 10-15 minutes before removing them from the pan.
