Zucchini Bread
Ingredients:
Oil for greasing pan
2 cups almond flour
½ tsp salt ½ tsp baking soda
1 tsp ground cinnamon
2 large eggs; lightly beaten
¼ cup butter; softened
¼ cup stevia powder or sweetener or your choice
1 cup grated zucchini
½ cup chopped pecans
Directions:
Preheat oven to 350?. Grease a 5×7” loaf pan and line with parchment paper. In a large bowl, combine almond flour, salt, baking soda and cinnamon with a wire whisk. In another bowl, add eggs, butter and sweetener. Add wet ingredients to dry ingredients and blend thoroughly. Fold in zucchini and pecans.
Pour batter into prepared pan and bake for 35 to 50 minutes.
