Apple Fritters

Ingredients:

Green apple (peeled, cored sliced into ¼” rings)
¼ cup coconut flour
¼ cup arrowroot powder
¼ tsp salt
3 eggs
¼ cup pure maple syrup
Olive oil for frying
Sweetener (Monk Fruit or Stevia)
Ground cinnamon

Directions:

In a medium bowl, combine coconut flour, arrowroot, and salt.  Mix in eggs and maple syrup.

In a small bowl, mix equal amounts of sweetener and cinnamon; set aside.

Heat 2” of oil in a frying pan or dutch oven.

Dip apple rings in batter then fry in small batches, about 2 minutes per side.

Transfer to a paper towel lined tray.  Sprinkle with cinnamon sweetener mix.

If you want to give it a little something extra, try it with the Caramel Sauce!
