Crispy Fried Green Tomatoes

Ingredients

  • 4 medium green tomatoes, cut into 1/4-inch thick slices

    1. 1/4 cup almond flour

    2. 1 tbsp tapioca flour

    3. ½ tsp dried oregano

    4. ¼ tsp cayenne pepper

    5. 4 tbsp sesame seeds

    6. 2 eggs, beaten

    7. ¼ tsp salt

    8. 4 tbsp oil

    Directions

    1. Combine the almond flour, tapioca flour, cayenne pepper, oregano and salt in a pie plate. Beat the eggs in another pie plate. Place the sesame seeds in a third plate. Heat the oil in a large skillet over medium heat.

    2. Press the tomato slices into the almond flour mixture, then dip into eggs. Shake off excess and dip again in almond flour mixture and beaten eggs. Then dip into the sesame seeds.

    3. Place 3-4 slices in a heated skillet and cook for 2-3 minutes per side or until golden. Transfer to a paper towel-lined plate. Repeat with remaining tomato slices. Serve with pico de gallo.
