Beef & Spinach Patties
Ingredients:
1 small onion, finely chopped
3 tablespoons butter
1 clove garlic
1 egg
1 pound ground beef
1/2 cup well drained, thawed frozen chopped spinach
1/2 cup beef broth
1 teaspoon salt
1/4 teaspoon coarsely ground black pepper
chopped parsley for garnish
Directions:
Saute onion in 2 tablespoons of butter in a large frying pan, until soft and lightly browned. Remove from heat and mix in garlic.
Beat egg in a medium bowl. Blend in onion mixture, ground beef, spinach, 2 tablespoons beef broth, salt and pepper. Shape into 4 oval patties, each about 1 inch thick.
Add 1 tablespoon butter to same pan in which onions were cooked. Place patties in pan and brown over moderately high heat, about 4 minutes on each sider, turning once. Remove patties to a warm platter to keep them warm.
Add remaining 6 tablespoons broth to pan. Cook, stirring to mix in pan drippings. Boil for about 30 seconds and pour over patties. Sprinkle with parsley.
Makes 4 servings.
