Grilled Chicken Cutlets with Southern Citrus Marinade

Ingredients:

  • 2 boneless, skinless chicken breasts

Marinade:

  • 1/2 cup cilantro leaves

  • 1/4 cup grapefruit juice

  • 2 tablespoons lemon juice

  • 1/4 cup olive oil

  • 1 jalapeno pepper, halved lengthwise and sliced

  • 1/2 teaspoon kosher salt

Directions:

  1. Mix all marinade ingredients together in a small bowl.

  2. Slice chicken breasts in half horizontally. Place cutlets in a resealable plastic bag and pour in marinade. Marinate cutlets at least 2 and up to 8 hours ahead of cooking.

  3. Place cutlets on hot, oiled grill and cook for about 2 minutes per side, just till there is no pink remaining.
