Beef Fajitas

Ingredients

  • 2 lbs skirt steak

  • 1/3 cup fresh lime juice

  • 1/3 cup olive oil

  • 4 large garlic cloves, minced

  • 1 1/2 teaspoon ground cumin

  • 2 teaspoons pepper

  • 1 medium onion, sliced

  • 1 bell pepper, sliced

  • 1 tablespoon butter

  • salt and pepper to taste

Directions

Gently pound steaks to an even thickness. Insert steaks into heavy-duty zipper bag or a large shallow baking dish. Combine lime juice, olive oil, garlic, cumin, and cracked pepper mixing well. Pour marinade over steaks and let marinade in refrigerator for at least 8 hours, turning steaks occasionally.

Remove steaks from marinade and grill steaks over hot coals, 6-8 minutes on each side.

Sprinkle sliced onion and peppers with salt and pepper and add butter, wrap in aluminum foil and cook over hot coals for 5 to 8 minutes until tender.

Slice steaks diagonally across the grain into thin slices. Serve with onions and peppers and your favorite toppings, like guacamole, sour cream, cilantro, and lime.
