Wood Grilled Salmon
Ingredients
4 skin on salmon filets
Cajun seasoning, try this recipe to make your own!
1 Tablespoon olive oil
2 cups wood chips, soaked for at least 15 minutes
Directions
Brush salmon with olive oil and season with Cajun seasoning. Use aluminum foil to create four shallow trays big enough to fit your filets. Poke holes in the bottom of the trays with a knife. Evenly fill the trays with the soaked wood chips and place on grill while the grill is heating up or until chips are just beginning to smoke. Place salmon filets directly on top of wood chips, skin side down. Cover grill and cook for about 10 minutes or until salmon reaches 145 degrees. Use a thin spatula to separate then skin from the fish, if it is cooked through the skin should come off easily and stick to the wood chips. Serve immediately.
