Cajun Catfish
Ingredients
2 tablespoons butter
2 tablespoons olive oil
4 catfish filets
1 onion
1 tablespoon garlic powder
1 tablespoon black pepper
1 tablespoon paprika
1 1/2 teaspoon cayenne pepper
1 teaspoon salt
Directions
Combine all ingredients except for catfish filets in a cast iron skillet over high heat until hot, but not smoking. Simmer until onion is translucent. Pat fish dry and place fish in hot skillet with the other ingredients and cook until it is opaque on the bottom, about 5 minutes. Turn fish carefully. Cook until the fish flakes apart easily, about another three minutes. Serve with your favorite veggies or try our sautéed okra and peppers!
