Green Salsa

Ingredients:

  • 1 large onion, chopped

  • 1 tablespoon olive oil

  • 2 pounds of fresh tomatillos or 4-10-ounce cans, drained

  • 3 large green or poblano chiles, chopped

  • 2 cloves garlic, minced

  • 6-8 fresh jalapenos or serranos

Directions:

  1. Sautee the onion until clear; do not brown.

  2. Add the remaining ingredients and simmer for 20-30 minutes.

    Makes 4 cups.
