Homemade Mayonnaise

Ingredients

  • 2 egg yolks

  • 1 whole egg

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon style mustard

  • 1/2 teaspoon salt

  • Pinch of ground white pepper

  • Up to 2 cups olive oil

Directions

Add the egg yolks, egg, lemon juice, mustard, salt, and pepper in the food processor and process until creamy. With the food processor running continuously begin pouring in the olive oil very slowly. Stop pouring every few seconds to make sure the oil is being emulsified. Add oil until you reach the taste and consistency desired.
