Spring Salad

Ingredients

  • 4 medium tomatoes, diced

  • 1 cucumber, peeled and sliced

  • 1/4 to 1/2 white onion, sliced thin

  • 8 radishes, sliced

  • 1/3 cup fresh parsley, chopped

  • 4-5 stalks of asparagus, chopped

  • 1 avocado, sliced, optional

  • 1 cup arugula, chopped

  • 2-3 tablespoons of extra virgin olive oil

  • 1-2 tablespoons lemon juice

  • salt and pepper to taste

Directions

Mix tomatoes, cucumbers, radishes, onion, parsley, asparagus, and arugula in a bowl. In a separate bowl whisk together olive oil, lemon juice, salt and pepper. Pour dressing over salad when ready to serve and enjoy!
