Easy Morning French Toast Sticks

Ingredients:

  • 5 slices of your favorite low carb bread cut into sticks

  • 2-½ tbsp. coconut oil

  • 3 large eggs

  • 1/3 cup almond milk

  • 2 tsp. vanilla extract

  • ½ tbsp. cinnamon (plus extra for sprinkling over French toast sticks)

  • Xylitol or your favorite sweetener for sprinkling

  • Maple Syrup (optional for dipping)

Directions:

Slice and cut bread into sticks and set aside.

Heat medium skillet over medium high heat, and melt coconut oil.

Whisk eggs, almond milk, vanilla, and cinnamon together until combined.

Using your fingers or a fork, dip the sticks into egg mixture. Flip a few times, and let excess run off, and put into hot oil.  Cook until golden brown.

Sprinkle with cinnamon and xylitol or sweetener and enjoy.
