Italian Vegetable Medley
Ingredients:
1 clove garlic, minced
1 onion, sliced
2 teaspoons olive oil
3 cups combined red, yellow, or green bell peppers, sliced
2 zucchini, sliced (about 2 cups)
salt to taste
1 teaspoon thyme, oregano or basil, or a combination of all
Directions:
In a large skillet, saute garlic and onion in olive oil.Add a splash of water and cook vegetables until tender. Stir in peppers, zucchini, salt, and herbs.
Cover and cook until tender.
Makes 8 servings.
