Italian Vegetable Medley

Ingredients:

  • 1 clove garlic, minced

  • 1 onion, sliced

  • 2 teaspoons olive oil

  • 3 cups combined red, yellow, or green bell peppers, sliced

  • 2 zucchini, sliced (about 2 cups)

  • salt to taste

  • 1 teaspoon thyme, oregano or basil, or a combination of all

  1. Directions:
    In a large skillet, saute garlic and onion in olive oil.

  2. Add a splash of water and cook vegetables until tender. Stir in peppers, zucchini, salt, and herbs.

  3. Cover and cook until tender.

Makes 8 servings.
