Basil Pork Chops

Ingredients:

  • 4 pork chops (1 1/4 lbs)

  • 1 cup tomato juice (may substitute V-8 juice)

  • 1 tablespoon basil

  • 1/2 teaspoon salt

  • 1 teaspoon coarsely ground black pepper

Directions:

  1. In a large frying pan, brown chops.

  2. When chops are browned, add other ingredients.

  3. Cover tightly and simmer 40 minutes or until tender.

  4. Turn meat occasionally and add a few tablespoons of water if necessary to prevent burning.
