Protein Pancakes
Ingredients
1 cup almond milk
2 eggs
2 tablespoons melted coconut oil, plus more for the pan
2 tablespoons pure maple syrup or 2 teaspoons stevia
3/4 cup blanched almond meal
1/4 cup flax meal
1 teaspoon salt
3 teaspoons baking powder
Directions
In a small bowl mix together almond milk, eggs, coconut oil, and maple syrup.
In a another bowl whisk or sift together almond meal, flax meal, salt, and baking powder.
Add dry ingredients to wet and stir until just blended. In a non-stick skillet melt a coconut oil, enough to cover the bottom of the pan, over medium-high heat. With a measuring cup or cookie scoop, scoop 1/4 cup portions and pour into pan. Cook until top of pancake looks partially set and flip. Serve with pure maple syrup, bananas, or your favorite fresh berries.
