Slow-Cooked Chili

Ingredients:

  • 2 pounds ground turkey or beef

  • 1 tablespoon olive oil

  • 2 large onions, finely chopped

  • 1 carrot, chopped

  • 1 stalk celery, chopped

  • 3 cans of diced tomatoes

  • 1 tablespoon paprika

  • 2 tablespoons coriander

  • 1 tablespoon ground cumin

  • 1 tablespoon salt

  • 2 tablespoons regular or hot chili powder

Directions:

  1. Heat a large skillet over medium-high heat.

  2. Add the onions, carrots, and celery and saute until softened, about 5 minutes.

  3. Add the ground turkey or beef and cook until meat is just browned, another 6-8 minutes.

  4. Transfer the meat and vegetable mixture to a slow-cooker and add the tomatoes and remaining ingredients.

  5. Set on low and cook for at least an hour and a half, and up to 6 hours.
