Shrimp Lettuce Wraps
Ingredients:
1 pound shrimp (pre-cooked), chopped
1 firm but ripe avocado, chopped
1/2 cup grated carrots
1/2 diced cucumber
1/4 cup chopped green onion
Asian Dressing Ingredients:
1/4 cup plus 2 tablespoons grapeseed oil
1/2 cup orange juice
1/4 cup shallots
1/2 teaspoon ginger
1/4 cup cilantro
1/4 cup roasted, salted cashews, chopped (optional)
Directions:
Whisk all dressing ingredients together in a small bowl.
Place chopped shrimp in a large bowl.
Add dressing to taste.
Spoon mixture onto lettuce leaves. Top with chopped nuts, if desired.
Serves 4 people as a meal, serves 8 people as an appetizer.
