Shrimp Lettuce Wraps

Ingredients:

  • 1 pound shrimp (pre-cooked), chopped

  • 1 firm but ripe avocado, chopped

  • 1/2 cup grated carrots

  • 1/2 diced cucumber

  • 1/4 cup chopped green onion

Asian Dressing Ingredients:

  • 1/4 cup plus 2 tablespoons grapeseed oil

  • 1/2 cup orange juice

  • 1/4 cup shallots

  • 1/2 teaspoon ginger

  • 1/4 cup cilantro

  • 1/4 cup roasted, salted cashews, chopped (optional)

Directions:

  1. Whisk all dressing ingredients together in a small bowl.

  2. Place chopped shrimp in a large bowl.

  3. Add dressing to taste.

  4. Spoon mixture onto lettuce leaves. Top with chopped nuts, if desired.

Serves 4 people as a meal, serves 8 people as an appetizer.
