Spinach Salad with Strawberries and Toasted Almonds
Ingredients
1 bag fresh baby spinach
1 cup sliced fresh strawberries
1/4 cup sliced toasted almonds
1/2 cup almond oil
3 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon poppy seeds
salt
Directions
Mix vinegar and honey until well blended. Gradually whisk in oil. When oil is emulsified add poppy seeds and season with salt to taste.
Toss spinach with strawberries and add dressing to lightly coat. Sprinkle the salad with almonds and serve immediately.
